Recipe: Protein Chocolate Chip Banana Bread

This protein chocolate chip banana bread is so simple to make! Adding Greek yogurt, eggs, and whey makes for additional protein. Not to mention gluten-free for those who might want that option! Add this recipe to your meal prep for the week!

ingredients

Wet Ingredients:

  • 1 1/2 cups mashed bananas (*I use overly ripe almost browned for best flavor)

  • 1/3 cup melted butter or coconut oil

  • 1/2 cup granulated sugar (light brown, coconut, or white)

  • 3 large eggs

  • 1/2 cup Greek yogurt

  • 1tsp vanilla extract

Dry Ingredients:

  • 2 Cups Gluten Free all-purpose flour (Bob’s Red Mills 1-1 is my favorite)

  • 1/2 cup vanilla protein powder (Use code: MIC20 to save 20%)

  • 3tsp baking powder

  • 1 tsp cinnamon

  • 1/4tsp salt

  • 3/4 cup chocolate chips

instructions

  1. Preheat the oven to 350 degrees Fahrenheit

  2. Spray and line a 9x5 loaf pan and set aside

  3. Mash the bananas (should equal about 1 1/2 cups) & add to a mixing bowl

  4. Whisk in all remaining wet ingredients until smooth

  5. Whisk in the dry ingredients, making sure to spoon and level the flour

  6. Whisk until smooth

  7. Fold in 1/2 of the chocolate chips

Next…

  1. Transfer to your prepped pan & top with the rest of the chocolate chips

  2. Bake for 55-65 minutes or until a toothpick comes out clean

  3. Remove from the oven and let cool in pan for 8-10 minutes

  4. *Optional (lift out from the pan and let cool on a rack before slicing)

  5. Or my favorite option…slice and ENJOY with melted butter :)

Notes

I do not recommend subbing non-Greek yogurt because the consistency is much more watery.
